Ingredients needed to make a "Hawaii" Rum Punch
750ml Appleton Special Rum
9.5 ozs fresh squeezed lime juice
9.5 ozs Dole Pineapple Juice
1.25 ozs simple syrup
1.25 ozs allspice simple syrup
5 ozs Chandon (Cali) "Champagne"
Block of ice w/lime discs

mix everything in a bowl over block of ice except champagne
Then top with champagne
To make allspice simple syrup I made simple syrup, then threw a nice shake of allspice in a 2/3 cup measuring cup, poured hot simple syrup over top and let sit for a while.
Saw this in WSJ about 2 wks ago. I brought it to a neighborhood fete last Friday. Some liked it, many thought it too strong. I think I should have upped champagne and pineapple juice. Make sure to freeze block of ice night before. I liked it -- but I like a stiff cocktail.

The Appleton Rum makes this drink "Bajan", the Champagne makes it French, but the Pineapple makes it Hawaiian. The ingredients combined, make this drink great. Nice.
